ROMITORIO LE TOFANE SEASONED PECORINO
Ingredients: Pasteurised sheep's milk, selected lactic ferments, rennet, salt Organic product
This is a seasoned, pasteurised Pecorino cheese, aged for at least 5 months. After the firstprocessing,where the mixture is heated to 41° there follows ageing on wooden boards, where the cheesesare often turned. The seasoned Romitorio surrounded by "noble" moulds which are washed awaybefore consumption simply with warm water, however, if you want, you can also enjoy the crust.It is accompanied by heavier red wines, chestnut honey and jams of onion or figs.
