This cheese is Pecorino cheese par excellence, the one that with every processing changes its tastebecauseit's closely influenced by the place, the herbs that grow there, the animals that produce the milk andtheclimate. The milk is transformed raw, without any heat treatment, the same day on whichit's milked. Its characteristics of wholesomeness guaranteed through two consecutive months ofanalysison the milk. Another two other months of "quarantine" in the seasoning cells ensure that theproduct is guaranteed under the health and hygiene profile but which at the same time retains everyaromatypical of the cheese as it was made traditionally.
